TROPICAL SMOOTHIE RECIPE (& IT’S VEGAN!)

A luscious, tangy tropical smoothie, made with fresh passion fruit, mango and coconut yoghurt. Taste the sunshine!

Equipment

  • 1 blender

Ingredients

  • 0.5 whole passion fruit seeds and pulp
  • 0.25 whole mango nice and ripe
  • 80 g pineapple chunks tinned is fine
  • 100 ml coconut water
  • 2 tbsp coconut yoghurt
  • 2 cubes ice

Instructions

  • cut the passion fruit in half, and scoop out the seeds and pulp into a blender
  • cut the mango in half, taking care to cut around the large stone, and cut into chunks. Add to blender
  • pop the tinned pineapple, and a little juice from the tin into the blender
  • add the coconut water, yoghurt and ice cubes
  • blend on high for 30secs
  • if the smoothie is a little too thick, add 50ml more coconut water (or pineapple juice from the tin if you like it a little sweeter)

Notes

Alternatively, if the peeling and chopping feels like too much hard work, pop 1 sachet of our Pash 'n Shoot smoothie in a blender, add 100ml coconut water + 2 large tbsp coconut yoghurt and blend. Summer, done!
