Easy Spinach Mango Smoothie

- 1 cup mango frozen or fresh, in chunks
- 1 cup baby spinach washed
- 1/2 cup pineapple chunks tinned is fine but in juice, not syrup
- 200 ml apple juice not from concentrate
- 1 stick lemongrass the inner white part, chopped and bashed
add all ingredients to blender
blend on high for 30 seconds
serve!
if the smoothie is a little too thick, add a little pineapple juice from the tin

Mango Smoothie Recipe Variations
You might be looking at the smoothie recipe above and thinking that it could never be improved - and you're probably right. With its creamy texture, delicious taste and numerous health benefits (we'll cover those in a bit), it's got everything you could want from a smoothie, right?
Well, one of the many things we love about smoothie recipes is just how flexible they are. If you want to use up some ingredients (maybe some fresh fruit before it goes off), or you want to add in some extra nutritional benefits, or maybe you just want to experiment with the flavour a bit. So let's go through some variations:
First of all, you can replace the fresh spinach with frozen spinach if you have it- a great ingredient to keep in the freezer and chuck in. You could also use different leafy greens like kale - though you should blanch it first. If you would like a creamier smoothie, try adding in some fresh banana (frozen banana works just as well), especially if you have some in the bowl that might be turning a bit black. They may also be a good option if you find it's a bit too zesty for you, just to add a bit of sweetness.
When it comes to what liquid to use, there are plenty of different options. Some people prefer orange juice to apple, and pineapple juice is another good option if you just can't get enough pineapple! Maybe you could try unsweetened almond milk, oat milk or coconut milk - each with a subtle difference in flavour and bringing with them their own health benefits.
Then we come to a host of extra little ingredients - a dollop of Greek yogurt to make it even creamier, almond butter, ground flaxseed and chia seeds are high in healthy fats, some vanilla protein powder as an extra supplement, or maybe some maple syrup for some added indulgence! If you are using fresh mangoes and fresh spinach, you might want to add ice cubes before you blend, just to make sure it is nice and cold when you drink.
