100g pudding rice, short grain rice, or sushi rice
70g coconut sugar
1 tsp vanilla essence
500ml coconut milk (store-bought or homemade, recipe below)
100ml water
Instructions
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a bowl, mix together the rice, coconut sugar, water, vanilla essence, and coconut milk. To make sure everything is incorporated equally, stir the items thoroughly.
Grease a small oven-safe baking dish (about 20 x 15 cm) with a little coconut oil or butter to prepare it.Spread the ingredients evenly in a baking dish after pouring the mixture.
Keep stirring the rice every few minutes as it cooks for 90 minutes to prevent it from sticking to the bottom.
The rice ought to retain a hint of crunchiness after baking. Once taken out of the oven, allow them cool for a moment before enjoying.

As a warm and cosy dessert, serve the coconut rice pudding with sliced bananas, spoonfuls of almond butter, plum compote or even just a drizzle of additional coconut milk.If you're looking for a creamy texture, sushi rice works just as well as pudding rice.
