Ingredients

  • 100g pudding rice, short grain rice, or sushi rice
  • 70g coconut sugar
  • 1 tsp vanilla essence
  • 500ml coconut milk (store-bought or homemade, recipe below)
  • 100ml water

Instructions

  • Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  • In a bowl, mix together the rice, coconut sugar, water, vanilla essence, and coconut milk. To make sure everything is incorporated equally, stir the items thoroughly.
  • Grease a small oven-safe baking dish (about 20 x 15 cm) with a little coconut oil or butter to prepare it.
    Spread the ingredients evenly in a baking dish after pouring the mixture.
  • Keep stirring the rice every few minutes as it cooks for 90 minutes to prevent it from sticking to the bottom.
  • The rice ought to retain a hint of crunchiness after baking. Once taken out of the oven, allow them cool for a moment before enjoying.

As a warm and cosy dessert, serve the coconut rice pudding with sliced bananas, spoonfuls of almond butter, plum compote or even just a drizzle of additional coconut milk.
If you're looking for a creamy texture, sushi rice works just as well as pudding rice.
