- 100g pudding rice, short grain rice, or sushi rice
- 70g coconut sugar
- 1 tsp vanilla essence
- 500ml coconut milk (store-bought or homemade, recipe below)
- 100ml water
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
In a bowl, mix together the rice, coconut sugar, water, vanilla essence, and coconut milk. To make sure everything is incorporated equally, stir the items thoroughly.
Grease a small oven-safe baking dish (about 20 x 15 cm) with a little coconut oil or butter to prepare it.Spread the ingredients evenly in a baking dish after pouring the mixture. Keep stirring the rice every few minutes as it cooks for 90 minutes to prevent it from sticking to the bottom.
The rice ought to retain a hint of crunchiness after baking. Once taken out of the oven, allow them cool for a moment before enjoying.
As a warm and cosy dessert, serve the coconut rice pudding with sliced bananas, spoonfuls of almond butter, plum compote or even just a drizzle of additional coconut milk.
If you're looking for a creamy texture, sushi rice works just as well as pudding rice.

You can get coconut milk’s luscious, creamy texture without the unnecessary chemicals and preservatives by making it at home with our easy-to-follow instructions. The richer, more genuine taste of handmade coconut milk makes it a great complement to coconut rice pudding and other similar recipes.
- Toss the dried coconut with the oil in a hot skillet and cook until golden, about 10 to 12 minutes. The coconut will rapidly become brown if not stirred regularly to prevent burning.
- In a blender, combine 500 ml of cold water, a sprinkle of salt, and the toasted coconut. Blend until smooth. Whip for a minute or two on high speed till silky.
- Pour the combined mixture into a colander lined with a clean muslin cloth. For maximum milk extraction, firmly squeeze the muslin. The pulp that remains can be either discarded or put to another use.
