Spicy Sweet Potato Soup Recipe

- 4 whole sweet potatoes peeled and diced
- 1 whole red pepper chopped into chunks
- 2 whole carrots diced
- 1 tbsp olive oil
- 1/2 onion diced
- 1 clove garlic peeled and finely chopped
- 1 whole red chilli deseeded and finely chopped
- 1 tsp smoked paprika
- 200 ml vegetable or chicken stock
Heat the olive oil in the pan on medium high then add in the onions and garlic. Let them sauté, stirring occasionally, until the onions start to turn translucent.
Add the rest of the vegetables and stir well, cook for 5 minutes or so until soft. Add in the chilli and the paprika and stir to prevent burning.
Add the stock, and leave on a medium heat to simmer on a low heat for around 45 minutes, until the vegetables have fully softened,
Use a stick blender or food processor to blend into a smooth soup - season with salt and pepper to taste, and serve hot!
So as you can see, this is a pretty straightforward soup recipe that doesn't require much in the way of culinary talent - (even less if you just bung all the ingredients in a slow cooker or Instant Pot!).
