As the nights start to draw in and as the weather turns from ‘meh’ to ‘urgh’, sometimes a hearty and delicious soup is the best dish to lift your spirits. The immediate hit of warm, tasty vegetables is exactly what you need – warming you from the inside out and packed full of goodness. In that moment, though, all that matters is that comforting flavour. Nothing beats it.
There are so many reasons to love soup. A quick-and-easy meal, that is as scrumptious as it is healthy, which you can tailor to your exact tastes. They’re a great way to stay hydrated, particularly at a time of year when we tend to drink less water as it gets cooler, and they’re low in calories.
Spicy Sweet Potato Soup Recipe Variations
We touched on the versatility of soup earlier in this blog, and we are really going to hammer that home now with a look at the many ways that you can modify this recipe to create your ideal soup. Use all your favourite toppings, and eke out even more health benefits from one bowl of soup!
We’ll start with how to prepare your soup – some people prefer roasted vegetables when they have sweet potato or carrot soup (‘orange soup’ as my children call all soups of this colour, no matter what goes in it!). Roasting vegetables brings out a different flavour profile, a more nutty, yet sweet, taste. The counter-argument is that you lose some of the vibrant colour.
Another subtle change you can make is to change the type of stock you use. Some people prefer a chicken stock, which adds a more meaty flavour. Some people, especially if they are looking to cut down their sodium intake, just use boiling water, but you may lose some flavour. Bone broth is great here too, to boost the nutritional benefits of your soup.
There are plenty of changes that you can make to the spices that you include in this soup. We like to include a red chilli because we love the heat that it brings, but that won’t be for everyone – while others may choose to sprinkle some chilli flakes on top when it’s served to bring even more heat! You can, of course, leave out the fresh chilli, and include some ginger, more garlic, cumin or coriander to create the perfect flavour.
If you are looking to just take the edge off the spice, a good option is to add in some double cream (be mindful of the extra calories), natural yogurt, sour cream or coconut milk when you serve it – these will help it cool slightly too. Use these to make a nice swirl in your bowl and it looks even more mouthwatering!
Now we come to toppings, and the options are almost endless. Sunflower seeds and almonds will add even more nutrients to the soup, while a little bit of grated cheese could make it more filling and even more comforting! Croutons are a classic soup topping, but try some fried chorizo pieces if you want to add a bit of meat and protein. Chickpeas, kidney beans or lentils could also offer a boost of substance and nutrition, but they will need to be cooked with the vegetables.
