3 ways with… AVOCADO

Full of Veg Open Sandwich

  • Cut a thick slice of sourdough & grill or toast, ideally you want some lovely little charred bits
  • Spread with pumpkin seed butter or another nut butter (not sweet)
  • Cut 6 cherry tomatoes in half
  • Grate 1 carrot
  • Mix the tomatoes & grated carrot with a few spinach leaves and a small handful of mung bean sprouts (maybe add a little balsamic vinegar)
  • Mash ½ an avo with a little lemon juice
  • Pile the avo mash on the toast and add the mixed veg

5 of your day DONE, in one mouthful!


The creamiest avocado smoothie

Pop all of these into a blender

  • ½ mango in chunks
  • a large handful of washed spinach leaves
  • 2 florets of blanched broccoli
  • ½ an avocado
  • 1cm grated ginger
  • a squeeze of lime and a little zest
  • add 200ml coconut water OR 200ml oat milk

The healthiest, most vibrant breakfast! (or pop a pouch of Avo-Go-Go in the blender and enjoy an extra 5 minutes in the shower 😊)

Roasted avocado salad

  • Cut 1 avocado in half and destone – you’re trying to keep the halves intact
  • Season with salt & pepper and pop under the grill until well charred on the outside (under a blistering oven grill, or on the BBQ)
  • In the meantime mix ½ tin chickpeas, some crumbled feta, the juice of ½ lime and a little sprinkling of chilli flakes with a couple of handfuls of fresh salad leaves
  • Mix the avo with the salad
  • Add a little chopped coriander & a drizzle of olive oil
