It’s high summer in the UK, the sun is out and Wimbledon is about to start. So it’s the perfect time of year for that classic British dessert Eton Mess, which is basically strawberries, cream and meringue bashed up together….what’s not to love?
Here is a fool-proof recipe – and you don’t have even to make the meringues…..
Serves 4
500g strawberries (locally grown if possible), hulls removed
400ml double cream
4 small ready-made meringue nests, crushed
1 tbsp elderflower cordial (optional)
Sprigs of fresh mint, to garnish
Eaton Mess Recipe – Method
Chill four wine glasses or glass bowls.
Purée half the strawberries in a blender. Chop the remaining strawberries, reserving a few for decoration.
Whip the double cream into stiff peaks, then fold in the strawberry purée and crushed meringue. Then fold in the chopped strawberries and elderflower cordial, if using.
Spoon equal amounts of the mixture into the cold glasses or bowls. Serve garnished with the remaining strawberries and a sprig of mint.
Now all you need to do is make yourself a jug of Pimms and settle down to watch some tennis!
