Easy Cauliflower Soup Recipe

One of our favourite myths to bust here at Love Struck is the notion that if something is tasty, it has to be bad for you. Proving this wrong is basically the premise for our entire business, and this Cauliflower Soup recipe epitomised that. It’s so creamy, so cheesy, so delicious, so warming, so comforting – and yet it is also packed full of goodness.

Cauliflower is an underrated vegetable – high in fibre and low in calories, packed with nutrients and vitamins, and incredibly versatile. We love cauliflower florets as a side, and who doesn’t love cauliflower cheese? But we think this wonderful vegetable really comes into its own in a creamy cauliflower soup.

Equipment

  • 1 roasting tray
  • 1 large pot
  • 1 stick blender or blender

Ingredients

  • 1 large cauliflower broken into florets
  • 1 large onion finely chopped
  • 1 stick celery finely chopped
  • 2 cloves garlic finely chopped
  • 1 whole leek sliced
  • 750 ml vegetable stock or broth
  • 100 g mature cheddar cheese grated
  • 1 sprig rosemary or thyme or both
  • 1 tbsp extra virgin olive oil

Instructions

  1. Toss the cauliflower florets in the roasting tray with a glug of olive oil and season with salt and pepper.
  2. Add the herb sprigs, and roast in an oven at 200C for around 20 minutes. You want the cauliflower looking gold, with a slight browning around the edges.
  3. While that is cooking, heat some oil in a saucepan on a medium heat, and then add the onion, celery and leek. Cook for 10 minutes stirring constantly, and then add garlic for 1 minute.
  4. By now the cauliflower will be about done, so take that out the oven and add the cooked cauliflower to the saucepan.
  5. Add in the stock, bring to a simmer and cook for around 15 minutes.
  6. Blend and serve immediately with some extra grated cheese on top.

Notes

You'll have noted that this is a roasted cauliflower soup - you can also cook the cauliflower in the saucepan with the other ingredients, but we love the way roasting brings out more of the flavour of the cauliflower. Even if it does create more washing up...

Simple Cauliflower Soup Recipe Variations

You know the phrase ‘life is what you make it’? It’s inspiring, isn’t it? Makes you believe that anything is possible. Well, what if we were to tell you that it could quite easily be applied to the world of making soup…? Suddenly takes on a whole new level of profundity, doesn’t it?

Yes, this ‘soup is what you make it’. There are so many different ways that you can modify the recipe above to add in some of your favourite foods and toppings – and plenty of ways that you can pack in even more goodness to this one bowl.

We’ve already touched on the way that you can cook the cauliflower, so we should also mention that you could roast the other ingredients alongside it, if you wanted to get a different flavour profile from the onion, leek and garlic. Even celery roasts well, and it comes out with a more earthy flavour.

You can vary the liquid as well. You can use chicken stock or chicken broth to give it a more meaty taste, or even some bone broth which brings with it a host of nutritional benefits like a protein boost and improved gut health.

When it comes to what herbs and spices you use – the only limit here is your imagination. You can sprinkle some cumin, dill, coriander, ginger, fresh parsley, nutmeg or more garlic when you are roasting your vegetables, even some chilli flakes, if you’d like a kick of spice!

Extra ingredients, like lentils, chickpeas, or split peas, can be added in as well – just throw them in when you are cooking the vegetables. A little bit of lemon juice will give it a bit of a subtle zing as well.

Now we come to creaminess. We are firm believers that the cauliflower does the heavy lifting here – once it is blended up it has a wonderful creamy texture. However, many like to give it a helping hand by adding in some whole milk or single cream (about 100ml should be plenty for the recipe above). This will make it a wonderfully creamy soup, but it will also add to the calories.

As for toppings, you can add in some croutons, perhaps the classic soup topping, or you can revert back to your herbs and spices – some chilli flakes, chives or chopped parsley on your hot soup. You could also keep back some of the roasted cauliflower and not add it to the saucepan, and then add the reserved cauliflower to the top of the soup before serving.

This is a cheesy cauliflower soup, but it doesn’t need to be. You can leave out the cheese, or you can try some cream cheese to get the best of both worlds. Some blue cheese works really well, and you don’t need much to get a powerful flavour.
