What are free radicals and oxidative stress?
To understand antioxidants, you first need to meet the troublemakers: free radicals.
Free radicals are unstable molecules looking for a spare electron. Your body produces them naturally during everyday processes like breaking down food and exercising, but things like air pollution, cigarette smoke, alcohol, and too much UV exposure also add to the load.
Because free radicals are missing an electron, they try to take one from nearby molecules. When too many build up, it creates a state called oxidative stress. Harvard Health notes that this can damage cell membranes, proteins, and DNA over time.
This is where antioxidants step in. They neutralise free radicals by donating an electron of their own, helping stop the chain reaction before it causes more damage.

Scientists often use a laboratory test called FRAP, which stands for Ferric Reducing Ability of Plasma, to measure antioxidant activity. Essentially, it tests how well a food sample performs in a lab setting.
The important bit: a higher FRAP score means higher antioxidant activity in that test. It does not perfectly replicate what happens inside your body after digestion, because bodies are a little more complicated than test tubes. Annoying, but true.
